Ingredients:
- Celery
- Onion
- Bacon
- Celery Salt
- Pepper
- Potatoes
- Cheddar
- Cheese
- Chicken Broth
- Whipping Cream
- Progresso Recipe Starter "Cheese"
- Chives
1- Saute the celery, onion, and bacon in a pan. Let the grease from the bacon soften the onions and celery as it cooks down.
2- Peel and cut potatoes into 1/2" (or about) pieces. The smaller the potato, the faster it will cook. Rinse potatos and put into a pot.
3- Add chicken broth to pot and bring to a boil. Turn down the temperature to meduim low and let the potatoes simmer in the broth until they are soft, almost mashable.
4- As the potatoes are simmering, the bacon, onion, celery mixture should be starting to soften. Add some celery salt and pepper, and give a good stir.
You are going to want to check on this often and stir during the first half of the football game. I suggest during commercials. You want the bacon edges to get a nice crisp on them.
5- Once the potatoes are softened, add the whipping cream and Progresso Recipe Starter "Cheese" to the the broth and potatoes. DO NOT Drain potatoes. Let this return to a nice hot simmer.
Go watch a little more football.
Just before halftime, the bacon should be crisp and the potato soup should be nice and hot.
6- Add the bacon, celery, and onion mixture to the potatoes. Add the cheese to the potatoes. Chop up (or juliene) the chives and add them to the potatoes.
Go watch the end of the last half of the football game.
I moved the bacon, celery, and onions over to the side of my frying pan instead of draining off the grease. Feel free to drain as much off as you want. I wanted a little bacon flavor from the grease in my soup, so I added the mixture straight into the pot, squeezing the mix getting most of the grease to stay in the pan.
Halftime! My Seahawks are loosing. :(
7- Come give your soup a final stir and serve.
Garlic bread went great with this recipe. No need to add any salt, extra cheese, or bacon bits. It was very good and eased the pain of watching my Seahawks lose the game 16 to 20.
Ah well, it's only the first game of the season. Go Hawks!
